The only change necessary in making a standard Reuben into this excellent vegetarian Reuben is substituting in a couple slices of faux meat, in this case “scorned beef.”

(Note: split seconds after posting this, I thought I’d unconsciously stolen “scorned beef” from Chad Carter. No - it was the even superior “ghost beef” of which I was thinking.)
